The founder, star chef Hansi Baumgartner, has transferred his culinary knowledge to the art of aging.
He has been able to match cheeses with some of the most sought-after ingredients, creating aging techniques whose roots lie in traditional methods of cheese preservation, but at the same time look to flavor innovation.
Over the years Hansi and his wife Edith have poured all their energies into the business, improving and refining not only the cheeses but more importantly their skills.
With this constant commitment, we select the best types of raw milk cheeses in our region, South Tyrol, in other regions of Italy and abroad, to create ever new refinements and guarantee you a wide and original range of choices.
The refiner perfects and enhances the aromas and flavors of cheeses by curing them naturally and embellishing them with new fragrances that give the products unique flavor profiles.
This has given rise to different ways of preserving it: wrapped in leaves or hay, covered with marc, beeswax or spices.
Operations that reveal a culture aimed at preserving the product, ancient traditions , but which still respect the original taste of the product.
