Sauvignon collio doc
The history of Collio’s vineyards dates back to pre-Roman times and crosses
the Middle Ages, a period when the wines from Collio were valued
throughout Europe. The Consorzio Tutela Vini del Collio was created in
1964, one of the first wine associations in Italy, and in 1968 it received the
recognition of the Denomination of Origin (Collio DOC). Sauvignon is one
of the most sought-after and esteemed wines from Collio, where it has an
ideal habitat to develop an extraordinary aromatic profile, together with great
freshness and structure, and therefore a long aging potential.
Tasting notes
Bright straw yellow color. The nose is fresh with vegetal notes; a mix of
sage, tomato leaf, and a pinch of rosemary. After a few minutes, the aromas
open revealing hints of box hedge, aniseed and white peach. The palate is
plush and round with a tantalizing and satisfying complexity.
Food Pairing
Excellent with any type of fish and strong, savory herb risottos, shellfish
salads with tomatoes and chives, pasta with freshwater crayfish and mint,
bouillabaisse.
