Merlot Valcolomba
The Mediterranean climate gives this wine the intense bouquet, depth and softness typical of the coastal Maremma region.
Grapes: Merlot, clones CL181;343;VCR1.
Harvest: the grapes were hand-picked and shipped in small crates with a refrigerated truck which immediately transported the fruit to the winery in Dudda, Greve in Chianti. There it was processed using state of the art equipment.
Vinification: temperature controlled fermentation at 28°C, using selected yeasts. Fermentation lasted 15 days with daily and delicate aerations and pump-overs.
Finishing: after the completion of the malolactic fermentation the wine was filtered and kept in cement tanks until bottling. The wine did not undergo any further treatments or processes.
Bottling: In March of the year after harvest. It is excellent when young, but as with any red wine of good mettle, it ages well.
Color: deep ruby red
Bouquet: intense, with hints of cherry, blackberry and red berries.
Flavor: supple and elegant, with good structure.
Alcohol: 14% by vol.
Total Acidity: 5,2 g/l
Residual Sugar: 2,8 g/l
Serving Temperature: 18-20°C (64-68°F)
Gastronomy: it may be paired with first courses or white meats. However, given its full bodied suppleness and its intense aromas, it will be best paired with savory dishes, such as Tuscan foods, roasts, grilled meats and cured meats.
