Characteristics of the Cantina di Montalcino Rosso di Montalcino
The Rosso di Montalcino from Cantina di Montalcino expresses a perfect bond with its territory. The Sangiovese grape with which it is produced manages to convey unique sensations that recall this land suited to quality wine production. The context is as suggestive as it is particular. The hill on which Montalcino stands is a relief of modest size on the sides of which order rows wind. Ideally it can be divided into four sides, each of which differs from the others in climate, soil and exposure. The winery is an important reality that has about 100 members who by joining their forces give this precious wine full of facets. The work in the vineyard is marked by maniacal care towards the vine, carrying out an almost painstaking work that will lead to the harvest. Here, the vine has been grown since ancient times. In the Middle Ages there were statutes that regulated its cultivation with precise indications on the harvesting period. Typically, the latter takes place manually in September by placing the bunches in boxes. Upon arrival in the cellar, we proceed with the crushing-destemming at a controlled temperature followed by maceration on the skins for 15-20 days. The pumping over is continuous in order to extract the pigments, aromas and tannins that will form the structure of the wine. Resting in wooden barrels for 7 months favors the formation of a complex and harmonious bouquet and, at the same time, softens the taste. The wine is silky, persuasive and elegant. Harmony is expressed through the coherence between olfactory and gustatory sensations. The prolonged persistence leaves a pleasant memory on the palate. The sweet tannins liven up the full and elegant taste. Its ideal combination is with Tuscan cuisine whose main dishes are based on red meats, game, mushrooms and medium-aged cheeses.
