is made exclusively from fresh full buffalo milk. The balls are porcelain-white in color with a very thin crust of about 1 mm thickness. The dough is very loose in the first 8-10 hours after preparation, then it gets firmer.
The "ciliegine" are small mouth-sized mozzarella balls, with which you can make excellent salads or sauces. Ideal in the classic dish: mozzarella, tomato and basil.
If you cut the ciliegine, some whitish liquid come out and you can smell the sweet perfumes of lactic acid bacteria, which are very important for the intestinal flora.
The velvety, melting and creamy taste is characteristic of this mozzarella. The product can of course also be smoked over a fire of straw.
This fresh product contains no preservatives. Its durability is 7 days.
