Molino Paolo Mariani was established in the early 1900s.
The mill continued to grind with the energy of water from the Nevola River until the 1950s and then, thanks to the efforts of his son Urbano, moved to a new, more modern plant powered by electricity, with an innovative cylinder grinding process.

Molino Paolo Mariani has an active supply chain, meaning that it takes care internally of every stage from sowing both from its own fields and from surrounding farmers with whom it has very specific agreements.
This method has led the Molino to become the only one in Italy with an in-house laboratory for the research and development of wheat varieties, and therefore flours, that are linked to the territory and express its identity, as well as the products that will result.
