Vinification: Drying of the grapes in the fruit room for 60 to 70 days. 15 to 17-day maceration in fermentation barrels of 130 hl with automatic Pigeage.
Ageing: 18 months in large oak barrels
Character: Dense, intense ruby; a fascinating nose with quince, black currant, bergamot; full-bodied despite considerable tannin potential. Very characterful, self-contained, with never-ending length.
Food pairing: Although the Sforzato needs no culinary companion, it fits well with red meat dishes with spicy sauce, wild pepper and aged cheese.
