Everybody in Paganico know that in the countryside, at the end of a working day, when the sun begins to descent behind the Sassoforte, it is best not to linger too much to tinker, or you might come across the White Wolf.
Some say it is nothing more than a mythical representation of the Mist, which in the autumn evenings envelops the country, and indeed many swear they have only glimpsed it, and nobody, we know, met him face to face , but it is certain that just naming it, everybody run towards home .

It is said that a hunter, chasing a big boar and not realizing the arrival of twilight, lost all his hunting dogs, who were lured away from their prey by the white wolf.
An animal that is mythical and mysterious, perhaps even invented, but it certainly is a hallmark of the community of Paganico, in which everybody remember the warning of parents, when, as we were children, we lingered to play: "Come home, or the white Wolf will get you all!"

We dedicated our most rare and precious wine to the elusive and mysterious White Wolf.


Grapes: Sangiovese 60%, Merlot 40% 


Origin: Vineyards Poggio, Cerretina 
 


Soil: Clay, calcareous, with pebbles 
 


Exposure: hills facing south-southwest 
 


Altitude: 330-350 m asl 
 


Density: 6000 vines / hectare 
 


System: cordon spur 
 


Yield: 50 quintals / hectare 
 


Vinification: Grapes are manually collected between september and October, according to the maturation of the different varieties. Rasps are taken away, and the wine ferments at controlled temperature of 23-25°C . It rests for 25 days in contact with the skins. 
 


Aging: It matures for two years in french oak barriques, half new and half of second passage, and at least 6 months in bottle.

Alcohol: 13.5% vol 
 


Characteristics: Dense and impenetrable Ruby red, strikes intensely with spicy sweet notes of licorice and tobacco leaf, after evolution taste of ripe fruit.
The taste combines the power of Sangiovese, with the elegance of Merlot and tastes soft, with sustained freshness and soft tannins.
