Sauvignon Blanc

“SAUVIGNON BLANC. IT TOOK ALL I KNOW”.

It is quite impossible to put into simple words the wine that led me to believe so strongly in a project, and made me become who I am today. A passion that has not stopped growing in twenty years. Enjoy the flavours of tropical fruits along with the twang of minerality.

Vinification: Maceration on the skins for 20 hours and temperature - controlled fermentation (at 6°/7°C)

Pressing: Very soft

Fermentation: Takes place for about 15 days with yeasts we carefully select.

Ageing: In steel tanks until April and further ageing in the bottle for at least 60 days.

Nose/Aroma: Tinged with distinct minerality and notes of tropical fruit that go from mango to papaya along with elegant white peach.

Mouth: There are all the flavours expected in a new world style Sauvignon (New Zealand)

Serving temperature: 10-11 °C
