erdicchio dei Castelli di Jesi Denomination of Classical Controlled Origin
Vineyards
Wine-growing region: Marche, province of Ancona.
Location: selection of several vineyards implemented according to the seasonal trend in the Classic area of production of Verdicchio in the municipalities of Montecarotto, Serra de Conti, Castelplanio and Rosora.
Age: 8-30 years.
Soil: of sedimentary marine alluvial origin, with prevalence of Plio-Pleistocene and Miocene clay and sand. Exposure and altitude: sunny and boreal exposures; average altitude from 250 to 430 m.
Vines and cultivation
Grapes: 100% Verdicchio.
Training system: upside down and guyot.
Plant density: 1.700-3.000 strains per hectare
Yield per hectare: about 100 q of grapes per ha.
winemaking
Harvest: double harvest by hand and part by machine during the coolest hours of the day.
Vinification: all phases are made away from air, in environments saturated with inert gas to preserve the product from harmful oxidation. Soft pressing and static decanting of cold must. Fermentation by specific yeasts at a very low temperature, subsequent storage and bottling in environments protected from the air and saturated with inert gas.
Maturation: after a short maturation in steel tanks, it is refined in the bottle in a temperature controlled warehouse.
Tasting notes
To the eye: the glow of its pale straw yellow, shaded with green, announces its freshness.
On the nose: the primary aromas expand to definite fruity hints of white peach, citrus fruits, apples, with delicate bitter perceptions, typical of the vine. Fine and very pleasant, it is supported by good intensity and prolonged odorigena extension.
To the taste: dry and soft, to deliberately favor its freshness. Its right alcohol content, with an excellent intensity and persistence, goes well with the well perceptible acidity and sapidity, typical of wines to be tasted in youth. The balance is therefore well proportioned in a wine created to enjoy in the summer, but which can be appreciated throughout the year.
Evolution
His youth is long-lived and reaches the age of about two years after the harvest, expressing in this period the best of his fragrance.
Pairings
Appetizers of crustaceans and bivalve molluscs and sea salads are an essential part of his court. He loves plump but not suffocated foods from spicy or overly aromatic sauces and nourishes, due to its freshness, "skin" antipathies with tomato. This makes it excellent on fatty fish from the sea, but also from river and lake, with white preparations. The pastas and risottos with butter are part of his preferences.
Service temperature
10/12 ° C.
