Märke: Melini
I COLTRI
Toscana IGT
Grapes: 65% sangiovese grosso, 20% cabernet, 15% merlot.
Vineyards: the grapes come from areas traditionally acclaimed for their fortunate combinations of soil, aspect and climate; the vineyards are trained by the Guyot and cordone speronato systems on well exposed soil of a varied nature (alberese, galestro, limestone marl, clay and conglomerates).
Vinification and ageing: the grapes are vinified by the red wine method (a small part of overripe Bordeaux grapes with skins intact) with 10 days maceration and frequent remontages; 30-35% of the new wine ages in new and used barriques until the bottling, with the rest in large casks.
Wine: ruby red colour, with purple shades; vinous bouquet, fragrant with attractive touches of macerated fruits of the forest and hints of irises and violets; soft, elegant, very balanced and fruity flavour, with a lingering, pleasing aftertaste of blackberries and raspberries.
… Coltro is the part of the plough which breaks up the soil, “coltrato” is the cultivated field which has been dug over, thereby clearing the best part of the farm of stones.
Optimum keeping: 2-3 years in bottles stored horizontally in cool, dark conditions.
Food matches: cured pork meats, savoury first courses, white meats and young pecorino cheese.
Serving temperature: 17°C.
