SAN LORENZO
Chianti DOCG
Grapes: 85% sangiovese grosso and 15% complementary varieties.
Vineyards: the grapes come from areas traditionally acclaimed for their fortunate combinations of soil, aspect and climate. The vineyards are trained by the Guyot and cordone speronato systems on well exposed soil of a varied nature (alberese, galestro, limestone marl, clay and conglomerates).
Vinification and ageing: the well ripened grapes, picked in October, are vinified by the red wine method with 3/4 days cold pre-fermentation maceration at a controlled temperature (28-30°C) with frequent remontages and a short ageing, partly in new casks and a small part in barriques.
Wine: bright, ruby colour; pronounced bouquet of raspberries and blackberries with hints of violets and irises; well-defined, full, savoury and pleasantly tannic flavour with a lingering, pleasing aftertaste of fruits of the forest preserve and almonds.
…the local people call San Lorenzo a piece of ground in the locality of Cipresseta, near the Gaggiano farm
Optimum keeping: 3-4 years in bottles stored horizontally in cool, dark conditions.
Food matches: mixed grilled meats, poultry, lamb, kid and pecorino cheese.
Serving temperature: 18°C.
