NEOCAMPANA
Chianti DOCG
RISERVA
The barrel aging gives this Chianti a full and persistent flavor. A wine rich in character with a balanced harmony of aromas and flavors.
The grapes: 85% Sangiovese, 15% complementary grapes.
The vineyard: the grapes come from areas that are traditionally suitable because of the combination of soil, exposure and climate. The vineyards, with high-density and relatively recent planting, are trained using the Guyot and spurred cordon system on well exposed lands, composed of alberese and galestro, the two typical soils in the Chianti area of Tuscany.
Vinification and aging: the well-ripened grapes are vinified on their skins with three/four days of cold pre-fermentative maceration, and this is followed by fermentation at a controlled temperature (26-28°C) with frequent pumping over. Between January and February when malolactic fermentation has been completed, the wine is aged in French wood for about 18 months. The Chianti Riserva is ready for tasting after a few months more ageing in the bottle.
The wine: a bright ruby colour, a marked perfume of raspberry and blackberry with hints of violets and irises and a full candid flavour with a pleasant lingering background of berry jam and almonds.
Analytical data: alcohol 13%; total acidity 5.10 g/l; pH 3.4; sugars 3.5 g/l; extract 26.8 g/l.
Ideal conservation: 4-5 years in bottles laid on their sides in a cool dark environment.
Food pairings: mixed meat grills, fine poultry, lamb, kid and cacio pecorino cheese.
Serving temperature: 18-20°C.
