Chianti DOCG
GOVERNO ALL’USO TOSCANO
An old story retold in new words.
Melini puts its signature to Chianti Governo all’Uso Toscano which has sprung from the rediscovery of a fascinating traditional method based on slow refermentig the wine when it has just been drawn off along with grapes raisined in the fruit shed.
A practice, rich in history and territory interpreted by a winery for which innovation has been a pride and joy for over three hundred years. The result is a wine with an authentic and intense character which pairs perfectly both with traditional dishes and with the delicacy of the new cuisine and the pleasure of a convivial aperitif.
The grapes: 80% Sangiovese Grosso, 20% complementary grapes.
The vineyard: the grapes come from areas that are traditionally suitable because of the combination of soil, exposure and climate. The vineyards, with high-density and relatively recent planting, are trained using the Guyot and spurred cordon system on well exposed lands composed of alberese and galestro, the two typical soils in the Chianti area of Tuscany.
Vinification: after careful selection by hand, some of the grapes are allowed to raisin in special fruit sheds ("fruttaio"). Following painstaking control of the drying stage, bunches that are perfectly integral but rich in sugar are obtained after about three weeks. At the same time, batches of wine that has just been drawn off are selected and the previously raisined grapes are added to this to trigger a second fermentation process.
This slow refermentation springs from the rediscovery and exaltation of a practice rich in history and territory: Governo all’Uso Toscano. This, combined with careful temperature control and skilful use of modern vinification techniques, makes it possible to obtain a "rich" structured wine, with a unique character which is engaging and inviting at the same time.
The wine: The colour is an intense and vivid ruby red while the perfume is enveloping and complex with marked notes of mature fruit (marasca cherry and raspberry) and pleasant floral scents (iris, violet); the flavour is full-bodied, smooth and fruity, keen and harmonious.
Analytical data: alcohol 14%; total acidity 5.40 g/l; pH 3.5; sugars 3.5 g/l; extract 29 g/l.
Ideal conservation: for immediate drinking but can still surprise after a few years.
Food pairings: hors d'oeuvres of charcuterie and assorted cheeses, tasty starters and vegetable soups, and grilled red meats, but also an inviting and convivial aperitif.
Serving temperature : 18-20°C.
