This fortified wine is the result of a blending between a perfect eight-year-old brandy and the must of Chardonnay grapes selected from the Franciacorta vineyards and yielded at full ripeness.
The must, obtained by a soft pressing, is left to macerate for a short time, then it was move into steel tanks for 5-6 days at a temperature near to 0°. This procedure separates the clear liquid from the solid parts of the must.
Later, before the fermentation, the must is blended with national brandy in order to obtain a final alcoholic strength of 17,5%.
The refinement process takes place in old oak butts with a capacity of 4 hl. During this period brandy added warmth, structure and softness to the fresh and fruity must.
The colour is yellow, golden and intense with amber-coloured shades. Of great and complex aromatic intensity, the bouquet has elegant flowered scents and sweet notes of honey and tobacco. The taste of Pinodisé, according to the bouquet, is impressive for its balance and mellowness.
Pinodisé can be used as an aperitif but it is also excellent with paté, cheeses with a marked taste and chocolate desserts.
Pinodisé can be served as an aperitif at 6/7 °C. Served at cellar temperature (13/15 °C), thanks to its sweet notes, it is perfect to exalt the taste of cheese and dessert.
