The cuvèe is assembled exclusively from chardonnay base-wines, some lots fermented and matured in small oak, others in stainless steel.
Applying slightly less liquer de tirage sets Saten apart from Cavalleri’s other Blanc de Blancs; this type of dosage results in a wine of softer pressure. The word Saten, equivalent to the French word Crèmant, is used only for Franciacorta DOCG wines and refers to sparkling wines displaying a silky creaminess on the palate.
This characteristic makes Cavalleri’s Saten the most suitable of all our Franciacorta wines to accompany a wide range of dishes.
