The history of Collio’s vineyards dates back to pre-Roman times and crosses
the Middle Ages, a period when the wines from Collio were valued
throughout Europe. The Consorzio Tutela Vini del Collio was created in
1964, one of the first wine associations in Italy, and in 1968 it received the
recognition of the Denomination of Origin (Collio DOC). To obtain this
single vineyard Sauvignon, grapes are strictly hand-picked in two separate
stages, so that the grapes picked first intensify the scent whilst the others
reinforce the structure. Moreover, before entering the cellar, the grapes
undergo a strict selection on triage table to select only the very best grapes.
Tasting notes
Deep straw yellow colour. The bouquet on the nose reveal vegetal notes,
sage and tomato leaf with a hint of rosemary. As the wine is left to breath for
a few minutes, the aromas open up to display the crisp scent of elderflower,
canteloupe and grapefruit. The palate accords perfectly with the aromas
already perceived on the nose. In the mouth, the acidity blends elegantly with
the global complexity of the wine.
Food Pairing
Perfect with shellfish, prawns and lobsters. Pairs well with Catalan lobster,
Sauvignon turbot, bread crumbed sardines.
