Also called “Ostigliato Rice”, is a variety which grows spontaneously in the rice fields, well defused in the past. Nowadays it is produced in a very limited quantity. Its strong aroma recalls past rural times. It suits any kind of dishes from risotto to soups.
Wild Rice with peppers
Ingredients (serves 4): 320g Wild Rice, 150g bacon, 1/2 diced red pepper, 1/2 diced yellow pepper, 3 tablespoons extra virgin olive oil, 1 litre meat stock, 10g butter, salt, pepper.
Preparation: Heat the oil in a thick-bottom pan, add the diced bacon and cook for 4 minutes. Add the peppers and after few minutes the rice. Toast the whole for a little while, then add the stock, one ladle at a time. When the rice is cooked (about 14 minutes) switch off the heat and stir in the butter.
