Ermes Red Rice with tomatoes, capers and anchovies
Ingredients (serves 6): 500g Ermes Red Rice, 6 fillets of anchovies, 3 tablespoons salted capers, 6 oil-dried tomatoes, 1 clove of garlic, 1 chilli pepper, 4 tablespoons extra-virgin olive oil.
Preparation: Put in a pan the oil with the anchovies, let them melt then add the diced tomatoes, the capers washed out of salt, the chilli, the garlic and cook for a few min. Put the rice in abundant, salted cold water, bring it to the boil and let it cook for about 30 minutes. Drain the rice, pour it in the pan and let it flavour for 5 minutes
