Hard cheese made from sheep's milk.
The rind is smooth and thin, white or light-yellow coloured, the "pasta" is white, soft and dense with very few holes, the taste is mild and flavoured or pretty sour. It shows a note of good freshness and an strong remind of typical sheep's milk taste.
Appearance and taste: a table cheese with a sweet and aromatic flavor that is spicy with increasing maturation. The dough is soft and compact when young and pale yellow when mature.
