Only the passion of a few seasoners gives us the possibility to taste this cheese made on a wood fire and seasoned for more than 80-90 days.

This cheese preserves the scent of cooked milk and grass while it leaves a slightly spicy taste in the mouth. It represents an extraordinary meal both when served alone or with polenta.
