When Paolo Gennari was asked to make a small wheel of Parmigiano Reggiano he replied that according to regulations, wheels weighing less than 38 kg could not be made.
But they did not believe him; they told him he could not make it.
Oro Nero cheese was born that day.
Milk from our farm is used, it is left whole and therefore richer in cream; about 10 kg wheels are made and left to ripen for about 6-9 months.
Upon reaching maturity, it is branded and its rind is painted black (with a substance suitable for food processing).
On tasting it, the sa- pore is sweet, soft, reminiscent of the sweet notes of yogurt and cream. We recommend it for an appetizing aperitif, for the mantecatura of the tastiest risottos or served in flakes to enrich a good carpaccio.
