Cheese Occelli in Chestnut leaves
Produced from goat's or sheep's and cow's milk in quantities that vary according to the availability of the season, this cheese is left to age for about a year and a half. The wheels are then wrapped in chestnut leaves which transform them and imbue them with a strong and exceptional flavour. It pairs well with important Langa wines but is ideal with important dark craft beer too.

It is all about flavours that are meeting new youthful tendencies and that are leading to curious and surprising combinations. Chestnut and tobacco leaves, the scent of mountain hay, natural cereals, the combination of black pepper and pink pepper, the wheat and bran of the stone mill of Valcasotto, mature and enrich these cheeses which in the end find their best matches in the great wines, or sweet wines and spirits, in whole-leaf tea or black spiced tea.
