Crushing and destemming every 30 minutes in horizontal fermenters with automatic temperature control. Aging for 16 months in barriques after racking. Before bottling, blend between the barrels in the optimal proportion; looking for good structure, elegance, finesse and roundness, with a light and soft wood. Bottled without stabilization and filtration, with possible slight deposit.
Pairings: Ideal with red meats, ragu and mountain cheeses, even seasoned.
