The sausage is made from pigs that are born, raised and slaughtered 100% in Italy. The lean mass is 70% and the proportion of selected fat is 30%. Due to the grinding the salami has medium grains. Only salt and whole black peppercorns are added to the dough. The mass is filled into a natural casing.
The cold cuts show dark red slices with white pieces of fat. The scent is soft and intense, while the taste is tender and delicate.
