Pretzhof Speck is aged in the deep cellars of the farm for many months, without preservatives and other chemicals.
The only ingredients are pork, sea salt, spices and mountain herbs, in soft cold smoking with alder wood.
It all starts at the farm in Val di Vizze, South Tyrol at 1,300 meters.
Today, as in the past, the laws of nature dictate the farming practices and the type of livestock feeding.
In summer, oxen, pigs, and cows graze on the alpine pasture at more than 2,000 meters above sea level.
Each animal needs its own time, in feeding, rearing, in butchering and in the maturing.
