Favola. An extraordinary Mortadella
Mortadella is one of the typical products of the Emilian cuisine tradition.
For the mortadella Favola only selected cuts of pork with a natural pink color are chosen. The incorporated bacon comes only from the neck. This is the highest quality piece of the fatty part of the animal.
The addition of acacia honey helps to create a full-bodied taste. But one thing makes this a very special Mortadella: It is sewn by hand into the rind and not pressed in a bladder or plastic wrap. So the freshly cooked product is well conserved and it retains its aromatic properties.
Since this is a natural product, it has to be consumed in a short time.
