Strüsett is a small salami, which is typical for the region of Brescia. However, the ingredients are the same of normal Brescia Salami: noble cuts of pork with the addition of 25% pork belly.
The sausage mixture is mixed with salt, spices and wine and placed in a small natural casing with the name "torta".
Before the sale, the salami is left to mature for at least 14 days.
Strüsett piccante: contains the same ingredients as the Strüsett with the addition of freshly ground chili peppers.
