GRAPE AND VINEYARD
In a territory that enjoys historical fame as regards the production of wines
white, we decided to test the adaptability of some innovative varieties.
Paying particular attention to all stages of pruning and selection of
grapes, thanks to soil and climate factors, we believe the result
positive of our choice. The harvest takes place in two phases, on the basis of different
vesting period of the two respective varieties.
THE WINE
About 60% of the free run juice, after a maceration night at 8 ° C, is left
fermented in stainless steel tank at a temperature of 13-15 ° C with pied de cuve of yeasts
natives. After decanting and clarification, the wine is stored in stainless steel tanks
until February, when it is bottled and placed in refining.
THE WINE
The cold maceration, fermentation and aging in stainless steel retain
preserving the characteristics of the two varieties.
Wine, fresh and tasty, has a good balance between lightness and aromatic persistence
