Märke: Conti Serristori
Sangiovese di Toscana IGT
This is a sangiovese, a vine indigenous to Tuscany and the basis of Chianti, Brunello and Nobile di Montepulciano. It is a high quality red wine, already enjoyable while young, but able to be kept without problems.
Grapes: 90% sangiovese, 10% complementary varieties.
Vineyard: highly acclaimed parcels, selected on the hills of Chianti, from the provinces of Siena and Florence. The vineyards are trained by Guyot and spurred cordon systems at varying altitudes of around 350-400 metres on well exposed terrain of very mixed composition: alberese, marl and limestone, loose clay, Pliocene conglomerates and alluvial deposits. The production of grapes per hectare is 100 quintals, with a yield of 70% wine.
Vinification: the grapes, picked at the end of September, are vinified by the red wine method, with two weeks maceration and frequent remontages; the fermentation takes place at a controlled temperature (25°C). The wine ages in stainless steel vats until it is bottled.
Wine: deep, bright ruby colour; intense, fragrant bouquet of raspberries and ripe blackberries, with definite and pleasing hints of vanilla, resin and violets; full, warm, soft but firm, fruity and well balanced flavour, with an elegant, lingering aftertaste of fruits of the forest preserve and spices.
Analytical details: 12.70% alcohol; 5.06g/l total acidity; 3.46pH; 3.10 g/l sugar; 27g/l extract.
Optimum keeping: 6-7 years in bottles stored horizontally in cool, dark conditions.
Food matches: pasta and risottos with meat sauces, poultry, roast white meats and mixed grilled meats.
Serving temperature: 18°C.
