Märke: Conti Serristori
Chianti Classico Riserva DOCG
Conti Serristori is a noble Florentine family which, 4 centuries ago, acquired, through marriage, the Machiavelli family’s estate of Sant’Andrea in Percussina where the great Niccolò, exiled from Florence, wrote his most important works (Il Principe, Mandragola and Clizia).
The ancient Machiavelli estate, with its vineyards, olive groves and cellars, and the prestigious brand of Serristori, are now owned by Gruppo Italiano Vini.
Grapes: 85% sangiovese grosso; 15% complementary varieties.
Vineyard: particularly acclaimed parcels, selected in the Florentine part of the Classico zone of Chianti. The vineyards are trained by Guyot and spurred cordon systems on well exposed hills (350 metres altitude) of very mixed soils, and often with different microclimates. The production of grapes per hectare is 75 quintals, with a yield of 70% wine.
Vinification: the ripe grapes, picked during the first week of October, are traditionally vinified by the red wine method, with 15-18 days maceration and frequent remontages; the
fermentation, following the addition of selected yeasts, takes place at a controlled temperature (25°C).
Maturation: two years in vats of Limousin oak. The wine ages for three months in glass before introduction for consumption.
Wine: bright ruby colour, with garnet tints; strong, heady bouquet, with a delightful fragrance of spices (cloves, cinnamon) and dried flowers (irises, violets) and hints of tar and marinaded raspberries; dry, savoury and clean flavour, of particular elegance with a distinctive, lingering aftertaste of liquorice and toasted almonds.
Analytical details: 13.0% alcohol; 5.5g/l total acidity, 3.35pH; 1.5g/l sugar; 25g/l extract.
Optimum keeping: 10 years in bottles stored horizontally in cool, dark conditions.
Food matches: mixed grills, poultry, lamb, kid and mature Pecorino cheese.
Serving temperature: 20°C.
