Artichoke Pate
Violet is a very special indigenous variety of artichoke. The name derives from the particular purple color that the artichoke assumes towards maturation. We cultivate it starting from October, the harvest begins in March and ends at the beginning of June. The artichoke is harvested and processed manually and delicately, within 24 hours. The pate is produced simply using artichokes and extra virgin olive oil and natural ingredients.
