Märke: Tenuta Sant'Antonio
GRAPPA: The loving process begins with the careful selection of the grapes from the oldest vineyards on the Estate, which are then meticulously and slowly dried. The wine is then made and left to age for six months in durmast oak barrels after which, Amarone Campo dei Gigli, the renowned masterpiece of the Castagnedi family, is ready. The enthralling power of this symbolic wine or, more specifically, its skins, seeds and pulp (pomace) are then taken and this noble grappa, with its refined and fragrant bouquet, is distilled in small copper cauldrons using the traditional bain-marie batch method. This magical and alchemic transformation produces Amarone Campo dei Gigli grappa, a pure pleasure for the palate. The vibrant energy of this grappa gives it an agreeably dry yet round and smooth character. It has a rich, aromatic depth with good body and warm persistence; the structure is harmonious and well-defined. The penetrating and velvety bouquet is vaguely reminiscent of the fruity aromas of Amarone.
SUGGESTIONS: Ideal at the end of a meal, perhaps with a good cigar in front of a roaring fire in the winter or on a terrace overlooking the sea or the hills in the summer, but always in good company. The fragrances offered up by Grappa di Amarone should be enjoyed in complete relaxation... And for anyone with a sweet tooth, why not heighten the aromatic experience with some good quality dark chocolate?
Pomace: Amarone.
Distillation: Discontinuous steam system.
Refinement: 10-12 months in wooden casks of different woods.
