DESCRIPTION
Château de Malle wine is produced in the homonymous winery located in the municipality of Preignac which also extends into the municipalities of Fargues and Toulenne, in the Bordeaux area. In the estate there are white grape varieties of Sauvignon, Muscadelle but above all of Sémillion, a native grape variety for more than 4 centuries in the Bordeaux area. The Château de Malle is produced precisely from the grapes of these three vines with the Semillon present for 70%, the Sauvignon for 28% while the Muscardell is in the remaining 2%. The production takes place through the particular preparation of sauternes through the use of the noble rot called Botrytis Cinerea which, with its presence, accelerates the drying of the grapes, thus enhancing the characteristics of the grapes themselves. All the vineyards that are engaged in the preparation of wine are at least 40 years old and are cultivated on a siliceous sandy soil, with a texture of clay mixed with gravel. This favors a correct balance between sugars and acidity which is the characteristic of Château de Malle, an elegant and persistent sweet wine, the result of an aging of 20-24 months in barrique and a further 12 months of bottle aging. To enhance all its characteristics, it is advisable to taste the wine from 5 to 25 years after the harvest, at the end of a meal and on special occasions.
