Powerful wine, with an elegant structure, with present but velvety tannins.

Separate vinification. Different cycles of processing of the skins to soften the tannins.
Direct racking in new barriques. Battonage cycles and lees processing to improve the roundness and complexity of the wine. Blending with the wine derived from dried grapes, and the end of the malolactic fermentation.
Racking into barrique and aging for at least 24 months. Bottled without any stabilization and filtration, with possible slight deposit.

Taste: Mature character, complex and elegant soft tannins. Partial drying of the grapes in crates to concentrate taste, aromas and fragrances.

Perfume: Young: in long aging.
When ripe: ripe fruit with light hints of vanilla and pipe tobacco.

Pairings: Excellent to combine with red meats, game, alpine cheeses, even seasoned ones.
