Lardo is a special type of bacon.
Lardo is a product that has long been forgotten and was rediscovered these days. It is one of the most tender and tastiest cold cuts, which are produced in Italy. Lard is the fat layer of the back of the pig. The fattest part is cut off.
The Lardo comes in a special container made of marble, which has been rubbed with garlic and herbs. At the bottom of the container a layer of coarse sea salt, freshly ground pepper, garlic, rosemary and sage is laid out. Then the lardo is placed on top of it. It is followed by a further layer of salt and spices, and so on, until the container is full and can be covered with a heavy marble plate.
The lardo is aged for at least 6 months in the marble container so that it can absorb the flavor of the spices.
Cut into thin slices, the lardo is suitable as an appetizer with fresh white bread and breadsticks or as an ingredient of sauces or as a side dish of certain foods.
Lardo di Colonnata is matured in marble containers made from marble from colonnata. This marble is very dense and has a high content of calcium carbonate.
