Zampone is a typical Italian specialty usually eaten during New Year's Eve. Zampone is made from the front trotter of pigs and stuffed with fresh, lean pork and a rind mixture flavoured with various spices. The precooked version is the most buyed by Italians, it comes in a foil packet ready to be immersed in boiling water, than cooked for about 20 minutes. After removed it from the packet, zampone is sliced and served with lentils on New Years Day shall bring luck. The lentils symbolize coins - the more lentils the more money and luck will bring the new year.
