The Amarillo Hop Modican Chocolate Bar is made with 50% organic cocoa, organic cane sugar and Amarillo hops. This idea was developed in collaboration with Birra del Borgo, a company that produces craft beers in the province of Rieti. After tasting several hops, we chose the Amarillo one, because it is less bitter and more aromatic. We found out that the hop is the only ingredient stronger than cocoa. In fact, it is the only case where, after tasting the chocolate, it remains the flavor of the hop, while with other flavorings the cocoa always predominates.
