Production features
Winemaking: each cru is vinified in purity. Afterwards the shortest possible time after the grape harvest it happens a special pressing. The spontaneous fermentation takes place, with autochthonous yeasts selected of our vineyard ultra- secular, in steel autoclaves.
Refining: in bottle, in a vertical position
Alcohol content: 6% Vol
Aging capacity: 5 years.
Organoleptic properties
A tribute to Santo Stefano Belbo. This snapshot looks somewhat “trembling”, due to, or better thanks to an extreme fine perlage, “rippling” a bright straw yellow wine. Yellow pulp and citrus fruits, fragrant bouquets (pineapple, lime and mandarin). In the mouth, this wine is light, fresh, with a well-balanced sweetness. It tastes great with a slice of bread with butter and anchovies although a piece of Castelmagno, not too seasoned, can be a worthy alternative.
To maintain at 5° shortly before the service.
