From the vineyard, the Chardonnay crates are placed in a refrigeration cell which has a temperature of 4°C, for the duration of 24 - 36 hours. The grapes cool down and reach a temperature of 10°C (50°F). This process allows a better extraction of varietal aromas. The cooled grapes are brought to the press for the soft pressing of the whole bunches, from which is extracted not more than 50% of the must flower. Afterwards the fermentation takes place at a temperature between 15 and 16° C (59 and 61° F) and the stay on yeasts continues until the moment of assemblage. The draft cuvée includes small percentages of the wine fermented in second and third passage barriques.
AGING IN BOTTLE ON LEES: From 36 months
FACE: Golden yellow
BOUQUET: From the fragrance of bread crust, it moves on to a light nuance of hazelnut and candied fruit to arrive at the pleasantly spicy finish
TASTE: Excellent balance between sapidity, the acid note of cedar and mineral hints
FOOD PAIRING: Ideal as an aperitif, at table it goes well with fish dishes, white meats and medium-aged cheeses.
