Vinification: grapes with uniform ripeness are obtained from spurred cordon systems.
The grapes are selected strictly by hand and directly on the vineyard at the first light of dawn. They are collected in small baskets and immediately taken to the cellar when the sun has not yet warmed them with its rays.
Soft pressing and white vinification at a controlled temperature follows.
After resting on the noble lees, the wine is refermented with selected yeasts, to enhance its varietal characteristics.
Alcoholic content: 12% vol.
The "I Doria di Montalto" farm has belonged to the Doria family for several generations: ever since the Oltrepò was an integral part of the Kingdom of Piedmont in the distant nineteenth century, and in the year 1800 the first farm was bought the wine history of the Doria family begins.
In the company the certificate of the Pavia Chamber of Commerce is jealously preserved, which in 1975 awarded the Gold Medal for 175 years of continuous activity in the wine sector to Pietro Doria, then a reference figure of the Family.
The soils where the vines are grown are of the marly-clayey type and are exposed to the south-west in the hills at about 250 meters in a dominant position. The excellent position and the characteristics of the soil, combined with the low production per vine, allow the harvest of grapes of great value and which wisely express the terroir.
All the grapes produced are managed with low production criteria, in fact on average the production does not exceed 7,500 kg per hectare.
Lively and full of verve, the Pinot Nero in Bianco Frizzante DOC produced by the I Doria di Montalto winery is an organic white characterized by a great olfactory cleanliness. It is a wine to be reserved for informal occasions, for lunches with friends because it amazes for its easy drinking and smoothness that does not renounce a fine and subtle elegance. The well-known Lombard company, whose passion for wine was born around 1800, has been able over the years to build a solid oenological heritage, managing to enhance the typical vines of the area. This Pinot Noir is a good example. Elaborated from a specific blend, 85% of Pinot Nero and 15% of Riesling Italico, it succeeds in the difficult task of combining the refined elegance of the first with the deep aromaticity of the second. The result is a label of great value, which pays homage to a particularly suited terroir. The Pinot Nero in Bianco Frizzante DOC therefore rests on the lees and referments on selected yeasts, which are necessary to enhance the typical varietal characteristics to the maximum. The fruity scent, with intense tropical notes, finds perfect correspondence in the pleasant and harmonious taste. Perfect in combination with light appetizers and vegetable-based recipes.
