Vinification: The "Guyot" training system combined with the "non-culture" and the thinning out of veraison, allows for a highly balanced basic product.
The grapes are selected strictly by hand and directly on the vineyard at the first light of dawn. They are collected in small baskets and immediately taken to the cellar when the sun has not yet warmed them with its rays. Fermentation takes place with a floating cap and is carried out at a temperature of 26 ° -28 ° C for about 8/10 days.
80% of the wine obtained matures in 225-liter barriques for 1 year; at the end of the maturation process it is blended at 20%, the conservation of which took place in steel tanks. The wine thus obtained lends itself to an aging period of 5/7 years.
Alcoholic content: 13.0% vol.
Rosso OP is a barrique wine that is the result of the traditional union of several Croatina, Barbera and Nebbiolo grapes which after a year of permanence in oak barrels are combined for at least 6 months to blend the different sensations and different aromas. For the Doria family each barrique is a small world and the formation of the cuvée is a magical moment of life on the farm. Subsequently, after clarification with fresh egg white, it is bottled and left to rest for over a year.
