VINEYARDS: Tresivio (SO), 480 - 550 m a.s.l.
HARVEST: manual in boxes
HARVEST PERIOD: 9, 10, 20 October 2019
VINIFICATION: spontaneous fermentation without the use of selected yeasts, followed by a 15 days maceration on the skins
AGING: malolactic fermentation and subsequent aging in stainless steel for 7 months.
