Brown Rice salad
Ingredients (serves 6): 500g Brown Rice, 100g Emmenthaler cheese, 2 slices ham 1.5cm thick, 150g small-size black olives, 4 basil leaves, 1 red pepper, 1 yellow pepper, 8 tablespoons extra-virgin olive oil, salt, pepper.
Preparation: Dice all the ingredients and add the olives. Put the rice in abundant, salted cold water, bring it to the boil and let it cook for about 25 minutes. Drain and mix the rice with all the ingredients already prepared, dress with oil and season with basil and pepper
