Goaserle cheese from Capriz is a soft cheese made from 100 percent goat's milk from South Tyrolean farms.
During the four-week aging period in the cellar, the cheese is washed and treated every two days with rennet and turned: hence its unmistakable flavor.
External appearance: yellow-orange rind, may have slight milk mold
Internal appearance: closed white paste, may contain individual holes
Consistency: regular texture; fluid consistency; depending on the degree of ripeness the core may be more to less solid
Smell: typical Rotschmier aroma
Taste: depending on degree of ripeness, mildly acidic to strongly spicy; slight goat aroma.
