The agretti, or more commonly called "Barba di Frate", are known and appreciated in the kitchen for their pleasantly bitter taste. You can use them for numerous recipes and have fun in the kitchen with a delicious Italian excellence.
Agretti Recipe:
Ingredients:
6 eggs,
250 grams of agretti (or beard of friar) to clean,
Parmesan,
extra virgin olive oil,
salt and pepper
Preparation:
After cleaning the agretti, cut them and place them on a cutting board. Meanwhile, in a bowl, beat the eggs and then add the agretti and parmesan
Stir together with pepper and salt and cook in a pan for about 10 minutes over medium heat.
After 10 minutes overturn the omelette and cook for another 10 minutes. Serve hot.
