Maiorca is an ancient variety of soft wheat characterized by excellent organoleptic properties and high digestibility. This flour is easily recognized by its heady aroma and almost intangible to the touch.
Obtained from washed and stone-ground Majorca wheat, it is ideal for making cakes and cookies, white breads, breadsticks and pizzas.
To produce excellent flour, it is certainly essential to have a quality grain, but careful and capable milling is equally necessary.
Thanks to the experience of our miller-Joseph Angelica-we have created a unique method that can get the best out of milling wheat.
A field of ancient grains is easily recognizable by their tall ears, a characteristic that makes them resistant to certain pests and weed species. Consequently, this allows cultivation without artificial fertilizers and pesticides. In addition to height, the seed size of ancient grains is also ill-suited to mechanized harvesting, prompting the use of more artisanal yet sustainable harvesting methods.
The Sicilian ancient grains we chose to mill include Russello, Timilia, Perciasacchi, Maiorca, and Senatore Cappelli. Common characteristics are their low gluten quality and low glycemic index, making them highly digestible and also indicated in cases of intolerances.
